HOPPING JOHN 
2 c. black eye peas, wash & drain
1/2 lb. sliced bacon
1 onion, minced
1 tbsp. salt
1/2 tsp. pepper
1 hot red pepper

Bring peas to a boil in about 3 cups water. Cover pot and let stand 1 hour. Cut up bacon and cook until brown; add onion and cook until golden. Pour mixture into peas, cover and simmer until peas are tender (1 hour). Stir in rice and seasonings. Cook, covered until rice is tender.
