MY MOM'S RICE PUDDING 
1 c. Carolina rice
2 c. water
1/4 tsp. salt
3 eggs
1 qt. milk
1 c. sugar
2 tsp. vanilla
1 (13 oz.) can evaporated milk

Combine rice, water and salt. Boil until water evaporates, then add 1 quart milk. Boil for 20 to 25 minutes. Mix 3 eggs, sugar, vanilla and evaporated milk. Add to rice mixture slowly, then bring to a full boil.
