ZUCCHINI BARS 
3/4 c. butter, softened
1/2 c. packed brown sugar
1/2 c. granulated sugar
2 eggs
1 tsp. vanilla
1 3/4 c. flour
1 1/2 tsp. baking powder
2 c. (3 med.) shredded unpared zucchini
1 c. shredded coconut
3/4 c. finely chopped walnuts
Cinnamon Frosting

Cream butter until fluffy. Beat in sugars gradually; add eggs one at a time. Beat in vanilla; stir in flour and baking powder. Stir in zucchini, coconut and walnuts. Spread evenly in greased 15 x 10 x 1 1/2-inch pan. Bake 40 minutes in preheated 350 degree oven.

CINNAMON FROSTING:

1 c. powdered sugar
2 1/2 tbsp. milk
1 1/2 tbsp. melted butter
1 tsp. vanilla
1/2 tsp. cinnamon

Beat all ingredients until frosting is smooth. Frost cake while slightly warm. Cut cake into small bars. Makes about 3 dozen.
