NEW ENGLAND LACE COOKIES | |
1 stick butter 1 egg 1 c. sugar 1 tsp. vanilla 1 c. quick cooking oatmeal Melt butter in medium size saucepan, remove from heat and add remaining ingredients; mix well. Using heavy-duty aluminum foil, line cookie sheet. Drop by teaspoonfuls very far apart (6 to pan that usually holds 12), and bake at 350 degrees for 8 minutes. Let cool completely. You have to peel these off the foil very carefully or they will break. The bottom of the cookie will be smooth as glass and it will taste more like candy that melts in your mouth. Makes 2 1/2 dozen. |
