CHICKEN CASSEROLE 
3 to 4 c. chicken, cooked
2 c. celery, chopped
1 c. onion, chopped
1 can cream of mushroom soup
1 can mushrooms
2 cans cream of chicken soup
2 c. chicken broth
1 c. rice, raw
1/4 c. cashew nuts
1 pkg. frozen peas

Cook a stewing hen until tender with stalk of celery, carrot, salt and pepper. Cut up into 1 inch pieces; should be 3 to 4 cups. Saute the chopped celery and onion. Mix with all the rest of ingredients. Bake in large casserole or pan at 350 degrees for 1 1/4 hours or longer.
