PUMPKIN CAKE | |
1/2 c. (1 stick) butter 1 c. brown sugar 1/2 c. white sugar 1 egg 2 egg yolks 3/4 c. buttermilk 3/4 c. pumpkin 2 1/2 c. cake flour 1 1/2 tsp. cinnamon 1/2 tsp. ginger 1/2 tsp. allspice 3 tsp. baking powder 1/4 tsp. baking soda 1/2 tsp. salt Cream butter. Add sugars and continue beating until light and fluffy. Add egg and egg yolks. Beat well. Combine milk and pumpkin. Combine all dry ingredients. Add wet and dry ingredients alternately to butter and sugar mixture, stirring after each addition. Pour into 2 ungreased and floured 8-inch pans. Bake 30 to 35 minutes at 350°F.
