MACARONI SALAD | |
Package of macaroni, any style or shape desired, cooked, drained, rinsed with cold water, drained again 1 lg. tomato, diced 3/4 c. onion, chopped 3/4 c. green pepper, chopped 3/4 c. green pimento stuffed olives, sliced Toss all of the above lightly, add enough fat free mayonnaise to desired moistness. Salt and pepper to taste. Mix well. (A good do ahead dish, layer ingredients, starting with tomatoes on bottom, this keeps any juice from making other items soggy. Put drained macaroni on top and seal until ready to add dressing and serve. Should be added about 1/2 hour ahead so flavors may blend. Drain any excess juice off before adding dressing.) |
