BASIC TURKEY SAUSAGE 
1 lb. ground turkey
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. oregano
1/4 tsp. basil
1 tsp. sage
1/2 tsp. thyme
1 or 2 cloves minced garlic

Mix thoroughly. Refrigerate overnight to let flavors mingle and develop. Makes 8 patties. Cook over medium heat and do not over cook. High heat makes sausage tough and over cooking will make it dry, because it has little fat.

For spicier sausage, add 1/2 teaspoon coriander seeds and 1/4 teaspoon cayenne pepper.
