BOSTON BAKED BEANS 
1 lb. pea beans
1/4 lb. salt pork
1 sm. onion, sliced
2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dry mustard
1/4 c. firm packed brown sugar
1/2 c. molasses
1/4 c. vinegar
1/4 c. catsup

Wash beans. Cover with 2 quarts water. Soak overnight. Next day simmer beans 1 hour. Drain. Reserve liquid. Make 1 inch slash in 1/2 inch intervals on pork rind. Cut off in slices. Place in bottom of bean pot. Add onions and beans. Combine remaining ingredients with 1 cup liquid and stir into beans.

Cover pot. Bake 6-8 hours in preheated 275 degree oven, adding more liquid if needed. Uncover the last hour to allow beans to brown. Do not add liquid the last hour.
