NOT SO DIRTY RICE | |
1 lb. ground turkey 2 med. onions, diced 1 lg. green pepper, diced 2 cloves garlic, chopped 1/2 c. celery, coarsely chopped 2 tbsp. olive oil 1/2 tsp. salt 1 tsp. black pepper, freshly ground 1/2 c. parsley, finely chopped 1 c. long grain rice 2 c. water Put first 5 ingredients through the finest blade of a food grinder or process in a food processor until finely chopped. Heat a heavy 4 to 5 quart casserole or large cast iron skillet and add olive oil. Heat until a light haze forms. Add the ground turkey mixture. Salt and pepper to taste. Reduce heat and cook uncovered until browned, about 1 hour. About 30 minutes prior to the end of cooking, boil water in a separate pan. Cook rice. Combine rice, meat mixture and parsley and place in a serving bowl. |
