DIRTY RICE | |
17-18 sets liver and gizzards 3/4 lb. ground beef 4 med. onions 2 med. bell peppers 4 strips celery 1 egg 2 sm. cans mushrooms 4 green onions 1/2 c. parsley 1 c. cooking oil Lightly cook livers and butter to hold together. Then either chop livers and gizzards or put through food chopper. Brown chopped livers, gizzards, and ground meat in oil. Saute onions, pepper, and celery in mixture. Add water to cover 1 inch. Simmer 2 1/2 to 3 hours in covered pan. Add mushrooms and simmer about 15-20 minutes. Let cool and skim off excess fat. Add to 2 1/2 pounds cooked rice and parsley, green onions, and raw egg. |
