DIRTY RICE 
2 tbsp. all-purpose flour
2 tbsp. vegetable oil
1 c. chopped onions
1 c. chopped celery
1/2 c. chopped bell pepper
2 cloves garlic, minced
1/2 lb. lean ground beef
1/2 lb. lean ground pork
1/2 lb. chicken giblets, chopped
2 tsp. salt
1/4-1/2 tsp. black pepper
1 c. chicken broth or water
3 c. hot cooked rice
1 c. sliced green onion tops

In Dutch oven or large skillet (preferably iron), cook flour in oil over medium heat until deep reddish-brown, stirring constantly to prevent burning. Add onion, celery, bell pepper and garlic. Cook until vegetables are tender. Stir in remaining ingredients. Cook until meat is done, stirring often.
