POTATOES LORRAINE 
2 eggs, beaten
1/4 c. bread crumbs
1/2 tsp. salt
1/8 tsp. pepper
2 lg. potatoes, unpeeled and cooked
2 tbsp. minced onion
1 c. shredded Cheddar cheese
4 slices bacon, cooked and crumbled
Paprika

Combine eggs, bread crumbs, salt, and pepper. Grate potatoes and measure 3 cups. Stir grated potatoes into egg mixture. Add onion, half of cheese, and half of the bacon. Spoon mixture into a lightly greased 1 1/2 quart casserole. Sprinkle top with paprika. Bake at 350 degrees for 25 minutes. Sprinkle top with remaining cheese and bacon; bake casserole an additional 5 minutes. Serves 4.
