APPLE DAPPLE CAKE 
3 eggs
1 1/4 c. oil
2 tsp. vanilla
2 c. sugar
2 3/4 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. nutmeg
1/4 c. flour
3 c. apples, chopped
1 c. nuts, chopped
1 c. coconut

In a small bowl, beat the eggs. Add oil, vanilla and sugar. Sift flour, baking soda, salt, ground cinnamon and nutmeg into mixture. Mix the 1/4 cup flour with apples, nuts and coconut. Then fold into mixture. Batter will be very thick. Spoon into greased 9-inch tube pan or Bundt pan and bake at 350°F for approximately 70 minutes.

If sheet cake is desired, may be baked in one 9 x 13 pan. There will be too much batter. Place rest of batter in a 9 x 5-inch loaf pan.

Bake on 350°F for 40 to 45 minutes.
