2 cups unpeeled apples, diced
1 cup sugar
1 1/2 cups all-purpose flour, sifted
1 tsp. baking soda
1/2 tsp. salt
1/2 cup nuts, chopped
1/2 cup vegetable oil
1 egg, beaten
1 tsp. vanilla
1/2 cup coconut flakes

Mix apples and sugar; let stand until juice forms. Sift flour, baking soda and salt; add to apples. Add remaining ingredients and mix well. Pour into greased 8x12-inch pan.

Bake in 350°F oven for 40 to 45 minutes.
