TROPICAL FRUIT MUFFINS 
2 c. 100% bran
1 c. milk
1/4 c. butter
1 egg, beaten
1 1/4 c. all purpose flour
1/3 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1 c. diced fresh or canned pineapple
Coconut-Almond Streusel

In medium bowl, combine bran, milk, butter, and egg; let stand 5 minutes. In a small bowl, combine flour, sugar, baking powder, and baking soda. Stir into bran mixture just until blended. Stir in pineapple. Spoon batter into 12 greased muffin tin cups. Evenly sprinkle with Coconut-Almond Streusel. Bake at 400 degrees for 25 minutes or until done. Serve warm.

COCONUT-ALMOND STREUSEL:

Mix 1/2 cup flour and 3 tablespoons each: sugar, butter, flaked coconut, and slivered almonds.
