MEATLOAF STEW 
Loaf:

2 lbs. ground round
1/2 c. tomato sauce
1 small onion, chopped finely
1/2 c. bread crumbs
1 tsp. salt
1/8 tsp. black pepper
1 egg

Vegetables:

4 baking potatoes, skins left on but well scrubbed
4 carrots, not peeled, but well scrubbed

Sauce:

1/2 c. tomato sauce
1 c. water
1/2 tsp. powdered ginger
2 tbsp. mustard
2 tbsp. wine vinegar

Preheat oven to 350 degrees. Combine all loaf ingredients in a large mixing bowl, using a fork. Form loaf in a baking pan large enough to hold loaf and vegetables. Combine all sauce ingredients in a separate mixing bowl. Mix well. Place potatoes and carrots around loaf. Pour sauce over meatloaf. Bake 1 1/2 hours, basting loaf occasionally with sauce.
