QUESO TACOS 
This will feed a good size family or a small one for a few days depending on how full you fill your shells. Also makes a good taco salad.

1 cup rice
1-1 1/2 lbs ground beef
2-3 tbsp. Queso dip
8 oz. Velveeta melting cheese (1/4 block; can substitute off brand)
1 taco dinner kit (soft or hard shell, whichever you prefer)

Cook rice according to directions on package. Brown ground beef in skillet and drain grease when done.

Add in taco seasoning mix according to directions on taco dinner kit package. Stir in 2-3 tbsp Queso dip (depends on how much you like Queso dip) until well mixed. Stir in cooked rice and mix well.

Cut Velveeta cheese up into small pieces and add to the pan. Melt cheese, stirring occasionally.

When cheese is melted remove from heat and serve with your shells, taco sauce and any of your favorite taco toppings.
