GRILLED MAHI MAHI 
Mahi Mahi (dolphin) fillets
Italian dressing

Cut fillets into 1 1/2 inch to 2 inch strips. Marinate fillet in Italian dressing for several hours. Place fillets on a greased grill rack over hot charcoal. Cook until fish flakes when tested.

Excellent, and very simple. Use good quality Italian dressing and marinate for at least 3 hours.

I use Italian Dressing but add in a some fresh lemon juice and lay red & green bell pepper on top of the fish. I grill the whole mix inside of a 'foil boat' on the grill. Delicious fish and some peppers too!

Coat with olive then used Everglades seasoning, grill 15 minutes.
