CUMIN RICE | |
3 tsp. olive oil 1 green pepper, chopped 1 red pepper, chopped 1/2 c. onion, chopped 1 clove garlic, chopped 1 c. raw long grain rice 3/4 tsp. ground cumin 2 tsp. chicken broth granules 2 c. boiling water Heat 3 teaspoons olive oil in oven proof casserole. Add green pepper, red pepper, onion, garlic and rice. Cook until rice is slightly brown and onion is limp. Add chicken broth granules and boiling water. Cover tightly. Bake at 350 degrees for 30 minutes or until all liquid is absorbed. Serve with fish, meat, or fowl. Makes 4 servings. |
