HOOD CANAL STEW 
1/2 cube butter
1 lg. onion, chopped
2 garlic cloves, crushed
1 tbsp. dry parsley
1/2 to 1 lb. white fish (sole, cod, red snapper, etc.)
Clams, mussels, oyster and/or crab

Cook onions until soft. Add 1 large can of tomatoes, 2 cups chicken broth and a pinch of basil, thyme and oregano. Simmer 30-45 minutes. Add 1 1/2 cups dry white wine and simmer for 15 minutes. Add fish, etc. Simmer at least 20 minutes. Better if stew is made the day before. Serves 4 to 6.
