PICKLED BEETS 
Whole beets, tops & tips
2 c. vinegar
1 c. sugar
1 c. water (from cooked beets)
1 tbsp. whole cloves
1 tsp. allspice, whole
1/2 cinnamon stick

Cook beets until tender in water. Put spices in gauze bag, cook with vinegar, sugar and water; boil. Peel beets. Add to vinegar solution, boil. Fill sterilized jars and seal. Let set 24 hours before removing rings.
