BEET PICKLES 
1 gal. beets
2 c. sugar
3 1/2 c. vinegar
Dash of cinnamon
1 tbsp. allspice
1 1/2 c. water

Dip beets in hot water for several minutes, slip off skins. Add remaining ingredients and simmer all together 15 minutes, put in jars and seal.
