BEET PICKLES 
1 (16 oz.) can beets with juice
1/2 c.vinegar
1/2 tsp. cinnamon
1/4 tsp. cloves
Artificial sweetener to equal 1/2 c. sugar

Drain beet juice into saucepan. Add vinegar and spices and bring to a boil. Cool 5 minutes and add sweetener. Cover beets with liquid in a quart jar and let stand for 24 hours. Serves 4.
