PICKLED BEETS 
10 med. beets, cooked until tender, skin beets

Reserve beet juice BEFORE skinning beet.

1 c. beet juice
1 c. vinegar
6 to 8 tbsp. sugar (may add 1 c. sugar)
Cloves
10 whole allspice
Salt
Pepper

Heat liquid to boil. Pour over beets in sterilized jars to fill to neck of jar. Cap with lid immediately.
