KING RANCH CASSEROLE 
1 (3 lb.) chicken
1 can cream of mushroom soup
1 can cream of chicken soup
1 1/2 c. grated Longhorn cheese
1 lg. onion, diced
1 sm. can chopped green chilies, drained
1 doz. corn tortillas
Mild taco sauce

Boil chicken, debone and cut into bite-sized pieces. Tear tortillas into bite-sized pieces. Combine chicken, both soups, green chilies and taco sauce to taste. Beginning with tortillas layer in a large rectangular Pyrex baking dish - tortillas, chicken mixture, cheese - adding extra cheese on top. Cook 45 minutes at 350 degrees. Top with sour cream and sliced green onions, if desired.
