ZUCCHINI CREAM PIE 
1 c. zucchini, cooked and mashed
1 c. sugar
1 c. half & half or evaporated milk
1 egg, beaten
2 tbsp. flour
1/2 tsp. salt
1 tsp. vanilla

Mix sugar and flour together. Add zucchini, egg, milk. Blend well, add vanilla. Pour into unbaked crust. Sprinkle top with cinnamon or nutmeg. Bake at 325 degrees for 45 minutes or until set.

Mixture mixes well in blender or food processor.
