DATE PINWHEEL COOKIES 
1 1/3 c. chopped dates
1/2 c. water
1/2 c. sugar
1/2 c. English walnuts
2/3 c. shortening
1 1/3 c. brown sugar, firmly packed
2 eggs
2 3/4 c. flour
1/2 tsp. salt
1/2 tsp. baking soda

Cook dates, water, sugar and nuts until thick, set aside. Cream shortening and brown sugar. Beat eggs and add to sugar mixture. Sift together flour, salt and soda; add to sugar mixture. Refrigerate until firm; roll out 1/4 inch thick. Spread with date mixture; roll up like jelly roll. Wrap in waxed paper; refrigerate overnight. Slice approximately 1/2 inch thick. Bake at 375 degrees for 8 to 10 minutes.
