DAIRY LASAGNE | |
1 (8 oz.) pkg. lasagne noodles 2 tsp. olive oil 1 med. onion, chopped fine 1 green pepper, chopped fine 3 c. ripe tomatoes, chopped 1/2 tsp. salt 1/4 tsp. pepper 1/2 tsp. oregano 1/2 tsp. powdered garlic 1 pt. Ricotta cheese 2 eggs 1/2 c. Parmesan cheese Cook lasagne noodles until soft, but do not over cook. Drain and rinse well; drain. Heat olive oil in skillet; saute onion and green pepper. Add tomatoes and seasonings. Simmer for 8-10 minutes. Spread a thin layer of sauce in bottom of rectangle pan or dish then arrange a layer of cooked lasagne noodles side by side. Beat eggs. Add Ricotta cheese and spread a layer of this mixture over noodles. Then sprinkle with grated Parmesan cheese. Arrange another layer of noodles and add cheese mixture. Spoon tomato sauce and sprinkle with remaining Parmesan cheese. Bake in 350 degree oven for 30 minutes. 6 servings. |
