CRUNCHY PEA SALAD 
2 pkg. frozen peas
2 c. chopped celery
1/2 c. green onion, chopped
2 c. chopped cashews
8 slices bacon, cooked crisp and crumbled
2 c. sour cream
1/2 c. Garden Caf Dressing
salt and pepper to taste

Combine peas, celery, green onions and cashews; mix well, stir in sour cream and Garden Caf Dressing. Season to taste with salt and pepper. Cover tightly with plastic wrap and refrigerate to chill and blend flavors. Add crumbled bacon just before serving either by mixing it in, or by sprinkling on top as a garnish.

Garden Caf Dressing:

1 tsp. lemon juice
1/2 c. white vinegar
1/2 tsp. salt
1/2 tsp. Dijon mustard
1 small toe garlic, pressed
1/2 c. sugar
1 1/2 c. vegetable oil

Mix in jar and shake well.

Serves 8.
