BROCCOLI QUICHE 
10 oz. pkg. frozen broccoli, cut, thawed or 1 1/3 cup fresh broccoli, partially cooked in microwave for 2 minutes
3 eggs, slightly beaten
1 1/4 c. half and half
1 c. grated Monterey Jack
1 c. grated Cheddar cheese
Salt and pepper
1/4 c. minced onion

Sprinkle broccoli and onions in pie shell. Combine eggs, half and half, cheese, and seasonings. Pour into pie shell. Bake at 375 degrees for about 50 minutes or until top is golden brown. Variations: Add spinach, ham, mushrooms, etc.

NO ROLL PASTRY PIE SHELL:

1 1/2 c. flour
1 1/2 tsp. sugar
3/4 tsp. salt
1/2 c. oil
3 tbsp. milk

Put flour, sugar, and salt in pie or quiche pan. Pour oil and milk mixture into center of flour mixture and mix. Press to line pan. Pinch to flute edges. Bake filled crust at 400 degrees for 15 minutes; reduce to 350 degrees and bake until done. If using this recipe as an unfilled pie shell, prick entire crust and bake at 425 degrees for 12-15 minutes. Cool.

Since microwave ovens vary in power, you may need to adjust your cooking time.
