PEACH COBBLER | |
1/4 c. white sugar 1/4 c. brown sugar 1 tbsp. corn starch 1/2 c. water 1 tbsp. lemon juice 3 c. sliced peaches 1 c. flour 1/2 c. sugar 1 1/2 tsp. double acting baking powder 1/2 tsp. salt 1/2 c. milk 1/4 c. melted butter 2 tbsp. sugar 1/2 tsp. cinnamon Combine in saucepan white and brown sugars, cornstarch and water. Blend well. Cook over medium heat. Stir constantly until thickened. Add lemon juice to peaches. Combine with syrup and place in a 2 quart baking dish. Sift together flour, sugar, baking powder and salt. Add milk and melted butter. Beat until smooth and spoon over fruit. Sprinkle with 2 tablespoons sugar and cinnamon. Bake at 375 degrees for 40 to 45 minutes. |
