PEACH COBBLER | |
8 med. peaches, peeled and sliced 1/2 c. light corn syrup or honey 1 tbsp. all-purpose flour 1/2 tsp. salt 1 c. buttermilk baking mix 1/2 c. milk Sugar ABOUT 1 HOUR BEFORE SERVING: Preheat oven to 425 degrees. In shallow 1 1/2 quart casserole, toss peaches with corn syrup, flour, and salt. In bowl, with fork, mix baking mix with milk and 2 tablespoons sugar. Pour biscuit mixture over peaches; sprinkle with 1 1/2 teaspoons sugar. Bake cobbler, uncovered, 40 minutes or until peach mixture is hot and biscuit topping is golden. Makes 8 servings. Each serving: about 180 calories, 3 g. fat, 2 mg. cholesterol, 325 mg. sodium. |
