PEACH COBBLER | |
1/2 c. sugar 1 tbsp. cornstarch 2 1/2 c. canned peaches and juice (1 lb., 4 oz. can) 1 c. flour 1 tbsp. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt 3 tbsp. Mazola corn oil 1/2 c. milk Heat oven to 400 degrees. Mix sugar and cornstarch in saucepan. Slowly add peaches with juice. Bring to boil; boil one minute, stirring constantly. Pour into 1 1/2 quart baking dish. Dot with butter. Sprinkle with cinnamon. Mix dry ingredients together in a bowl. Stir in oil and milk. Drop by spoonful onto hot fruit. Bake 25-30 minutes, until golden brown. Serves 6 to 8. |
