CHEESED ARTICHOKE BOTTOMS 
2 (16 oz.) jars artichoke bottoms
1 (8 oz.) pkg. cream cheese, softened
2 tbsp. finely chopped green onion
1/2 c. grated Parmesan cheese
Green onion tops, finely chopped

Drain and rinse artichoke bottoms. Pat dry. Blend cream cheese with onion and a dash of pepper. Spoon about 2 teaspoonfuls into each artichoke, spread smooth. Sprinkle each with about 1 teaspoon Parmesan cheese. Place on baking sheet. Chill, if desired. Bake at 325 degrees for 15-18 minutes or until heated through. Garnish with green onion tops. Makes about 20 appetizers.
