ARTICHOKE SHRIMP SOUP | |
2 tbsp. butter 1/4 c. finely chopped green onion 1/4 tsp. thyme 2 cans tomato soup 1 c. cooked artichoke hearts or bottoms 1 c. cooked shrimp 1/2 c. cooked rice Salt & pepper to taste 2 tsp. lemon juice Heat butter in a large saucepan, add green onions and thyme. Cook about 4 minutes, stirring occasionally. Add soup and 2 cans (only) of water. Stir until blended. Add artichokes, shrimp and rice. Season to taste and heat thoroughly. Remove from heat and add lemon juice. Serve hot. Serves: 4. |
