CHICKEN ARTICHOKE CASSEROLE 
3 lb. thighs
1 1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. pepper
10 tbsp. butter
1 lb. mushrooms
1 (12-15 oz.) can artichoke heart or bottoms
2/3 c. chicken consomme
5 tbsp. sherry
2 tbsp. flour

Salt, pepper and paprika chicken. Brown it in 8 tablespoons butter then put chicken in casserole dish. Now add other 2 tablespoons butter in pan and saute mushrooms for 5 minutes and then sprinkle flour over it. Then stir in chicken consomme and sherry. Arrange artichoke between chicken and pour mushroom sherry sauce over it and bake at 375 degrees for 40 minutes.
