SALMON CAKES 
1 (1 lb.) can salmon
2 eggs
Salt
Pepper
3 slices bread
2 tbsp. onion
1 tbsp. lemon juice

Place salmon undrained in mixing bowl. Add eggs, salt and pepper to taste, bread finely crumbled, onion chopped fine and lemon juice. Mix well. Shape into 6 or 8 cakes and place on paper towels for 15 minutes. Pan fry in small amount of heated oil for about 15 minutes on each side or until golden brown. Serve.
