SALMON CAKES | |
1 lg. can pink salmon 1 egg 1/3 c. onion, minced 1/2 c. flour 1 1/2 tsp. baking powder 1 1/2 c. shortening Drain salmon and set aside 2 tablespoons of the liquid. Mix salmon, egg, onion, and flour until sticky. Add baking powder to salmon liquid and mix. Stir into salmon mixture. Form small patties and fry until golden brown in hot shortening. Serves 6-8. |
