SALMON CAKES 
1 lg. can pink salmon
1 egg
1/3 c. onion, minced
1/2 c. flour
1 1/2 tsp. baking powder
1 1/2 c. shortening

Drain salmon and set aside 2 tablespoons of the liquid. Mix salmon, egg, onion, and flour until sticky. Add baking powder to salmon liquid and mix. Stir into salmon mixture. Form small patties and fry until golden brown in hot shortening. Serves 6-8.

So good, I like the outside a little browned for the light crunch, I added 1/3 cup of onions, green and red peppers then sprinkled lemon pepper spice on tops while underside cooked and vice versa. Thanks and it was simple and quick!!
