MOM'S SALMON CAKES 
1 lg. can pink or red salmon
2 lg. eggs, beaten
Dash of salt
Dash of pepper
1 med. onion, finely chopped
1 1/2 tbsp. all-purpose flour
2 tbsp. butter

Drain salmon of juice and break apart with fork. Add eggs, salt, pepper to taste; mix well. Add onion and flour. Shape into patties. Fry in butter, turning once, until brown on both sides. Serve hot.
