CREAMY CHEDDAR CHICKEN 
1/2 c. each low-fat milk (1% milk fat) & canned ready-to-serve chicken broth
1 tbsp. all-purpose flour
2 oz. Cheddar cheese, shredded
5 oz. chicken cutlets, cut into 1" cubes
1/4 c. sliced scallions (green onions)
2 tbsp. seeded & diced tomato
1 slice crisp bacon, crumbled
1 c. cooked noodles (hot)

Using a wire whisk, in 1 quart microwaveable shallow casserole combine milk, broth and flour; stir until flour is dissolved. Microwave on high (100%) for 5 minutes, until mixture thickens, stirring every minute. Add cheese and stir until cheese is melted. Add chicken and scallions and stir to coat; microwave on high for 3 minutes, until chicken is cooked through. Stir in tomato and bacon.

To serve, on serving platter arrange noodles and top with chicken mixture.

Since microwave ovens vary in power, you may need to adjust your cooking time.
