CREAMY CHEDDAR CHICKEN | |
1/2 c. each low-fat milk (1% milk fat) & canned ready-to-serve chicken broth 1 tbsp. all-purpose flour 2 oz. Cheddar cheese, shredded 5 oz. chicken cutlets, cut into 1" cubes 1/4 c. sliced scallions (green onions) 2 tbsp. seeded & diced tomato 1 slice crisp bacon, crumbled 1 c. cooked noodles (hot) Using a wire whisk, in 1 quart microwaveable shallow casserole combine milk, broth and flour; stir until flour is dissolved. Microwave on high (100%) for 5 minutes, until mixture thickens, stirring every minute. Add cheese and stir until cheese is melted. Add chicken and scallions and stir to coat; microwave on high for 3 minutes, until chicken is cooked through. Stir in tomato and bacon. To serve, on serving platter arrange noodles and top with chicken mixture. |
