CREAMY JELLO SALAD 
2 boxes (sm.) sugar-free Jello (any flavor orange is good)
1 (16 oz.) can pineapple, crushed
1 c. light sour cream (or lowfat plain yogurt)

Drain pineapple, saving juice. Add cold water to make 1 cup total liquid. Chill. Mix gelatin with 2 cups boiling water, stir until dissolved. Add pineapple juice and sour cream. Mix with wire whisk. Pour in mold, if you choose. Chill. Add pineapple when slightly thickened.
