PINTO BEAN CAKE | |
Cake: 1/2 cup butter 2 cups sugar 2 eggs 2 cups refried beans or pinto beans 1/2 cup chopped nuts 1 1/4 cups flour 1/2 teaspoon baking powder 1 teaspoon each cinnamon and baking soda 1/2 teaspoon each cloves and allspice Cream butter, eggs and sugar. (If using pinto beans, put them through a blender). Add beans to creamed mixture alternately with sifted dry ingredients. Add nuts. Bake in greased and floured 9x13-inch pan 1 hour or until done. Glaze. Glaze: 1 cup brown sugar 1/4 cup milk 1 stick butter 1 teaspoon vanilla Mix sugar, milk and butter in heavy saucepan. Boil 5 minutes, stir in vanilla. Pour over hot cake. Serving Size: 8 |
