PINEAPPLE UPSIDE DOWN SKILLET
CAKE
 
4 eggs, separated
1 tsp. vanilla
1 c. flour
3 tbsp. butter
1 (15 oz.) can pineapple, any kind
1 c. granulated sugar
1 tsp. baking powder
3 tbsp. hot water
1 c. brown sugar

Beat the egg yolks. Add granulated sugar, hot water and flour sifted with baking powder. Add vanilla. Fold in stiffly beaten egg whites. In skillet put butter and brown sugar. Stir over low heat until dissolved. Add drained pineapple, let mixture simmer for a few minutes. Pour the cake batter over the pineapple mixture. Bake 30 to 40 minutes in 350 degree oven. Then turn cake upside down on a plate and serve.
