EASY PINEAPPLE UPSIDE DOWN CARROT CAKE | |
1/4 c. butter 1/2 c. packed brown sugar 1 (20 oz.) can crushed pineapple, drained 1 pkg. carrot cake mix Heat butter in 13 x 9 x 2 inch cake pan in oven until melted. Sprinkle brown sugar evenly over butter. Spoon crushed pineapple evenly over sugar. Prepare cake mix as directed and spoon over pineapple. Bake 35 to 40 minutes in oven preheated to 350 degrees or until cake springs back slightly when touched in center. Turn onto serving platter and cool. Serve with whipped cream or ice cream. For high altitudes: Follow cake mix directions but bake 40 to 45 minutes. |
