ZUCCHINI OATMEAL BREAD 
3 eggs, well beaten
2 c. sugar
1 c. oil
2 c. grated zucchini (do not peal)
1 tsp. vanilla
1 tsp. each of cinnamon, salt, baking powder
2 c. flour
1 c. oatmeal

Add the sugar to the beaten eggs, then add the oil and grated zucchini and vanilla. Add the spices and salt to the flour, then add this with the oatmeal to the sugar and egg mixture.

Bake in a greased and floured bread size pan. Bake at 350 degrees for 1 hour and 10 minutes.

Loved the recipe... got 10 stars from my family. Only flaw I had was I used my largest bread pan because there was an awful lot of mixture... and it came to within a 1/4-inch from the top of the top of that bread pan! I was still worried... and sure enough, half way thru baking I smelled burning-it spilled over into the bottom of my oven. Next time I will use two small bread pans! Because I WILL be making this again and again!
