RIGATONI WITH ZUCCHINI SAUCE 
1 pkg. rigatoni (4 - 5 portions)
1 1/2 oz. butter
2 tbsp. olive oil
Freshly grated Parmesan cheese
1 med. onion, finely sliced
6 - 7 med. zucchini, finely sliced
2 eggs
Salt

Melt the butter in a frying pan. Gently fry the onion. When lightly golden add the zucchini, saute quickly. Lower the heat and cook slowly. Add salt. Keep warm. Cook pasta according to the instructions on the package. In the meantime, beat the eggs in a large bowl. Season, add grated cheese. Drain pasta. Pour into the bowl. Toss all together. Add zucchini. Mix well. Serve with more grated cheese.
