MEXICAN CASSEROLE 
1 tbsp. oil
1/2 c. chopped onion
2 garlic cloves, crushed
1 lb. lean ground beef
1 (28 oz.) can stewed tomatoes
1 pkg. taco seasoning mix
1 (4 oz.) can diced green chilies
1 (2 1/2 oz.) can chopped black olives
1 (16 oz.) bag Nacho Tortilla Chips, crushed
1/2 lb. shredded Mozzarella cheese
1 pt. sour cream
1/2 c. shredded cheddar cheese

Preheat oven to 350 degrees. Heat oil in large skillet over medium heat. Add onion and garlic and saute until translucent. Add meat and cook until browned, stirring frequently. Blend in tomatoes, taco seasoning, chilies and olives. Simmer 10 minutes. Grease 9 x 13 x 2 inch baking dish. Layer half of chips over bottom. Add all of meat mixture, Mozzarella cheese and sour cream. Top with remaining chips. Bake about 30 minutes. Sprinkle with cheddar cheese and continue baking until cheese melts.
