MEXICAN HOTDISH | |
1 lb. ground beef 1 sm. onion 1 can enchilada sauce 1 can cream of mushroom soup 1 can cream of celery soup 1 soup can of milk 1 sm. can (drained) chopped green chilies 1 sm. can black olives (sliced) 1 pkg. frozen corn tortillas (10-12) 1 lb. grated Co Jack or Cheddar cheese Brown ground beef with chopped onion. Mix together in bowl next 6 ingredients. Add meat mixture. Layer mixture with tortillas in large baking dish. Top with grated cheese. Bake covered for 1 hour at 350 degrees. Uncover last 15 minutes. Test for doneness (tortillas should not fee tough). Let stand 5-10 minutes before serving. Serve with sour cream and lettuce on side. Serves family or company. |
