MEXICAN MEATLOAF 
1 tbsp. + 1 tsp. oil
1 c. chopped onions
1 c. red or green peppers
2 cloves garlic, minced
1 pkg. beef broth seasoning mix
1 lb. ground turkey or veal
4 oz. shredded cheddar cheese
3/4 c. bread crumbs
1/2 c. tomato sauce
1/4 c. plain yogurt
2 tbsp. chopped fresh parsley
2 tbsp. Worcestershire sauce
1 tsp. chili powder
Dash of pepper

Preheat oven to 375 degrees. In 9" skillet heat oil over medium heat; add onions, peppers, garlic and broth mix. Saute until onions are tender. In medium mixing bowl combine sauteed vegetables with remaining ingredients. Bake in loaf or 8"x8" pan until browned, about 45 minutes.
